Yeah, this is our bounty of cucumbers. Gracing the back of all the cucumbers is “Ron”. The rest of them were harvested today. I’m gonna be canning everything, but how much can a person make when each large cucumber weighs between 5 and 10 pounds each? Ron weighs 13.2 pounds. We purchased two cases of quart sized mason jars for canning, but I know that cucumber Ron will inhabit those two cases alone. We keep giving our cucumbers away, and actually we have about 15 more of them that are growing with tags on them for different family members. All the little cucumbers that are dark green to the left…almost all of them are a full sized, that’s how large the Armenian cucumbers are next to them. The same goes for the squash. The squash are actually market size. So, does any one have good cucumber recipes for canning?
The pickling cucumbers are a no brainer, but the Armenians have a gorgeous texture, are not bitter at all and are firm. We want to can them…so help us out with some good recipes!
